Sweet Potato Gnocchi with homemade vegetable sauce.
1 Medium size sweet Potato
1 Egg
1 cup of flour
mix and cooked in boiling water leave to dry while make tomato sauce.
Tomato sauce
Carrot,Courgette,onions,Garlic,tomatos chopped and spring green.

I made Daifuku today :) or Mochi with homemade red bean paste :)
1.Making the Red Bean Paste
no measurement. Cook Red bean till mushy(about 1 hr) add suger (I added about 4 TBs sugar) Stir till thick, approx 20 mins
2.Making the Mochi Dough
1 1/4 cup Glutinous Rice Flour
1/4 cup Sugar
1/2 cup water (i put more water when I made this but the mochi was too soft. Follow this recipe if you want the mochi to be firmer which I think is better)
mix in microwavable container, cover. Microwave on Low heat no. 2 about 6 mins. Taking it out every mins to stir, If you can’t adjust the strengh of the heat, take it out every 30 sec and microwave total of only 4 mins. This might surprise you that the mixture is quite watery but when you microwave it, it will be a dough consistency. The dough should feel like your ear lobe when done.
3.
Making Mochi. Dust surface with heaps of cornflour.. Get a plastic wrap, dust it with cornflour and use it to shape your mochi.
